Mediterranean Tilapia with Fresh Goat Cheese

Fish and cheese isn’t a combination that readily springs to mind, unless we’re thinking about lox bagels. But you’ll be surprised by how beautifully this Mediterranean dish comes together. Best of all, it’s simple and quick, and you probably have most of the ingredients in your pantry already.

Ingredients

  • 2-4 Tilapia fillets
  • 1/2 lemon, juiced
  • 1 onion, sliced
  • 2 tsp butter
  • 1 Fresh Goat Cheese log
  • ¼ cup white wine (Sauvignon Blanc)
  • 3 tbsp sundried tomatoes in oil
  • salt, pepper, Italian seasoning
  • olive oil

Instructions

  1. Preheat the broiler. Oil a small baking dish, place the fish in the dish and the onions around it, sprinkle everything with salt, pepper, and Italian seasoning, and brush a little bit of oil over the top. Squeeze the lemon over the fish and broil for 7 minutes.
  2. Flip the fish and onion, add the butter and wine and broil for two more minutes. Add the sundried tomatoes (do not add any earlier than this, or you risk charring them) and broil for a final two minutes.
  3. Sprinkle the goat cheese over the top and serve with any vegetable, or on a bed of couscous.
