The Fable

Semi-soft. Creamy. Mild with a hint of blue.

The sister cheese to our Mountain Top, our creamy White Rock is made from extra curd leftover when we form our Mountain Tops into their signature pyramid shapes. We press that curd into wheels and seal the resulting cheese, preventing blue mold from taking over. The result is White Rock, a mild goat’s milk cheese that’s extremely meltable, delicious with sweet and savory spreads, and that surprises you from time to time with a delicate whiff of blue.

Our fresh goat milk is first pasteurized and cooled to the perfect temperature for bacteria to do their best work. The milk is then fortified with Penicillium candidum Geotrichum, and Penicillium roqueforti (a.k.a. “Triple deliciousness”). Vegetarian rennet is added, coagulating the milk which is then cut into cubes, drained of whey, stirred, then drained again. From there, it’s scooped in pyramid-shaped molds and briefly brined.

We cut the excess curd off the molds, and then press the cheese again, this time into a round shape. After the pressing, those wheels are sealed and sent to the aging room.

This product contains milk, and FDA-designated “big-8” allergen. Note that in January 2023, the big-8 allergens become the big-9 with the addition of sesame.
