The Fable

Our fresh goat milk is first pasteurized and cooled. Cultures are added and the milk is agitated. We then add rennet and the cheese is on its way. Stirring it significantly longer than our other goat cheeses, finer curds are created. Scooped by hand into netted molds, the young cheeses are stacked on themselves to provide a gentle pressing. They are turned regularly, then brined before being put in a special aging room where their washing and brushing (aka spa treatments) commence.

This product contains milk, and FDA-designated “big-8” allergen. Note that in January 2023, the big-8 allergens become the big-9 with the addition of sesame.
