Herdsman comes to us from award-winning Cherry Grove Farm in Lawrence, NJ. This sustainable farmstead dairy practices rotational grazing on 200 acres of pasture. Herdsman, which is molded in Sicilian incanestrato baskets, is a rustic, natural-rind tomme with a crumbly texture and pleasant acidity. It’s mild-mannered enough, but it still has that raw-milk farmstead intrigue to please serious cheese lovers.
