Last week FireFly’s president Mike Koch joined the latest episode of the Cutting the Curd Podcast! He talked about our involvement with the Anne Saxelby Legacy Fund, through which we’ve hosted interns who want to learn the traditional craft of cheesemaking. As Mike said, in the cheesemaking industry “the connection between cheesemakers and farmers is sometimes lost,” but FireFly’s dedication to working with our neighbors allows apprentices to dive deep into an interconnected community of farmers and cheesemakers working together to build a more resilient food system, all while learning how to make some of the best cheese in America!
