Merry Goat Round Soufflé

Airy, light, and savory. Just make sure you serve it quickly, because once out of the oven this light concoction loses its fluff fast!




  1. Preheat the oven to 400 degrees Fahrenheit. Butter an 8-by-12 inch glass or ceramic baking pan.
  2. At this point it’s a good idea to set out all your measured ingredients beforehand within easy reach, because you’ll be stirring constantly until almost the very end. In a medium saucepan, melt the butter over moderate heat. Add the flour and whisk until blended and bubbling. Gradually whisk in the milk and bring the mixture to a boil, whisking constantly; simmer for 3 minutes. Gradually whisk in the cheese until melted. Season with a small amount of mustard, salt, and pepper. Whisk in the egg yolks.
  3. In a bowl, beat the egg whites until firm. Whisk half of the whites into the soufflé base, and then fold the base into the remaining whites. Pour the mixture into the baking dish, making sure to leave room at the top. Bake for 20 minutes, or until browned and puffed. Serve hot, immediately.
