Creamy Goat Cheese Spinach and Shrimp Dip

Spinach dip is a staple party food, but when made with our Fresh Goat Cheese it’s something a little more special. Lime and a single jalapeño give this dip a little kick that will keep you dipping back for more.

When possible, look for U.S.-caught shrimp.

Ingredients

  • Makes about 2 1/2 cups.
  • ¼ cup cilantro leaves
  • 2 scallions, cut into thirds
  • 1 garlic clove, minced
  • 1 jalapeño, chopped
  • 1 10 ounce package frozen chopped spinach, thawed and squeezed dry
  • ½ cup mayonnaise
  • 1 log Fresh Goat Cheese
  • 1 tablespoon fresh lime juice
  • ¾ pound cooked shrimp, chopped
  • Salt to taste

Instructions

  1. In a food processor, pulse the cilantro, scallions, garlic, and jalapeno until finely chopped. Add the spinach, mayonnaise, Fresh Goat Cheese, lime juice, and salt. Process until smooth. Add the shrimp and pulse until finely chopped. Transfer the dip to a bowl and refrigerate until chilled before serving.
