    Your Mt Top is just perfect—creamy flavorful cheese with just a hint of blue funk. Kudos! I discovered it at Lidl here in Fredericksburg, Va., this morning. When the store didn’t have the Brie I was looking for, I saw your cheese & found something so good — I’d never expect to find it at a chain. And you’re even local.

    I don’t know how to let the Lidl buyers know, but I sure hope I’ll find this and other of your cheeses again at “my” Lidl.

    This cheese is absolutely delicious. I’m pretty sure the blue moss on the mountain are actually Lichens though 😎

    My pyramid was sunken speaking to its age. After cutting into a corner and enjoying on a cracker the inside oozed out like rich white lava. It’s mild, with a slight bite, and delicious essences of mushrooms. Serve on a plain Milton’s salt cracker with white wine. SFG!!

The Fable

A soft-ripened, subtle-blue pyramid that stands tall.

Deep in the Appalachian Mountains lies a special mountain like no other. Rising out of a deep and foggy valley, its steep sides are coated in a beautiful blue moss, the favorite food of the shaggy wild goats who graze the mountain year round. The top is a flat like the Appalachian plateau where we live, as if sliced off by some giant’s cheese knife at the dawn of time. If you ever find this mountain, count yourself lucky, and keep it secret. Some things should stay hidden except for those who know where to look….

Our fresh goat milk is first pasteurized and cooled to the perfect temperature for bacteria to do their best work. The milk is then fortified with Penicillium candidum Geotrichum, and Penicillium roqueforti (a.k.a. “Triple deliciousness”). Vegetarian rennet is added, coagulating the milk which is then cut into cubes, drained of whey, stirred, then drained again. From there, it’s scooped in molds, brined, and aged. During this time, you’ll find our makers regularly turning the cheese — side to side — to ensure even moisture and rind development.

This product contains milk, and FDA-designated “big-8” allergen. Note that in January 2023, the big-8 allergens become the big-9 with the addition of sesame.
