The Fable

Soft ripened. Super creamy. And all spruced up.

One of our old customers, Santiago, took a Merry Goat Round with him on a long journey to his home in Spain, hoping to surprise his family. He was walking so long, in fact, that he noticed the cheese was getting too ripe and starting to droop. In a moment of inspiration, he used his swiss army knife to peel bark off of a nearby spruce tree and wrap the cheese for transport. When he arrived at home with his precious gift, he realized he had an entirely different cheese! Soft and creamy, with the delicate flavor of spruce – he wrote to us in excitement, and a new FireFly classic was born.

Our fresh goat milk is first pasteurized and cooled to the perfect temperature for bacteria to do their best work. The milk is then fortified with Penicillium Candidum (a.k.a. “The secret sauce”). Vegetarian rennet is added, coagulating the milk and creating a stronger curd mass bond, faster. The resulting mass is then cut into cubes, drained of whey, stirred, then drained again.

From there, the future spruce reserve is scooped in molds and brined, but hold on…before aging, it’s wrapped in a lovely layer of spruce cambium strapping to provide the cheese with a bit of support as it ripens and softens fully—like France’s Saint-Marcellin in a clay crock or Spain’s Torta del Casar in its firm rind. Then it’s off to the aging room where it will be continually checked and flipped by our makers, until it is ready to start its journey to your table.

This product contains milk, and FDA-designated “big-8” allergen. Note that in January 2023, the big-8 allergens become the big-9 with the addition of sesame.

  • Bake at 350°F until melted and pour over/mix with roasted potatoes or wild mushrooms
  • Try pairing with a Pinot Noir or an oaky white wine with candied nuts or honeycomb
  • The star of any cheese-plate, serve Spruce Reserve with crostini, pickled veggies and a spicy jelly or jam
