In the tradition of “Fromage de Chèvre,” pioneered by the late Laura Chenel who first made this delicious French fresh goat cheese in the 1970s, we are incredibly proud to champion our own fresh goat cheeses (chèvre literally translates to “goat”).
Our cheese makers begin their day in the early hours of the morning by hand-scooping and massaging whey out of curd that was pasteurized, cultured, and allowed to coagulate overnight. The whey is picked up by local pig farmers. As for the cheese, after a light salting, it’s on its way to you!

My wife and I have been grabbing FireFly cheeses since they opened on our summer vacations at Deep Creek Lake. Always amazing! Our favorite is the Black & Blue but always like to try new cheeses. This time we bought the 1lb block of Cabra La Mancha and WOW! Our new favorite! Also fell in love with the super moist Merry Goat Round! You won’t find better cheeses anywhere!

The fresh chèvre is our favorite here. We love stuffing dates with the chèvre & topping them with chopped pecans. Or using the fresh chèvre in truffles mixed with homemade strawberry jam and covered in coconut for a lovely appetizer or not so sweet dessert. Thanks for being able to ship this direct to our home!
