Our cheese makers begin their day in the early hours of the morning by hand-scooping and massaging whey out of curd that was pasteurized, cultured, and allowed to coagulate overnight. The whey is picked up by local pig farmers. As for the cheese, after a light salting, it’s inoculated with Geotrichum Candidum to help it form that beautiful wrinkly rind, and then aged for two weeks before heading out the door to you!
