Mountain Top is an innovative pyramid-shaped goat’s milk cheese with a light dusting of blue and white mold and a mild, nutty interior. White Rock, more like a young cheddar, is the sister cheese, made from the extra curd when we cut Mountain Top to size and aged separately so it never develops surface mold. Between the two you can enjoy the products of two different cheesemaking methods and celebrate our commitment to keeping waste to a minimum. Delightful with a mineral white wine.
