MountainTop, Bloomy Breeze, and Cabra La Mancha all received medals at the American Cheese Society’s annual awards ceremony this year. MountainTop and Bloomy Breeze, both soft-ripened goat cheeses, took third and second place respectively (MountainTop continues to be FireFly’s most award-winning cheese) . Cabra La Mancha was the highest awarded in its class in the goat’s milk washed rind category.

Cabra La Mancha, inspired partly by a trip co-founders Mike Koch and Pablo Solanet took to Spain in the early 2000s, is reminiscent of Basque goat’s milk cheeses like Ahutz Ederra or Garrotxa. In 2006/2007, the first wheels of Cabra began to be brushed and washed by hand in Accident, MD. Always made from pure goat’s milk sourced within 40 miles of the creamery, Cabra is mild, meltable, and has an incredible aroma, pairing well with natural wines, ciders, and a dry white wine.
