Grilled Merry Goat Round & Ham Sandwiches

When we’re feeling like more than a simple grilled cheese, we break out this recipe. Our Merry Goat Round melts like a dream, so keep the bread on the griddle just long enough to give it a golden crust. We recommend serving this incredible sandwich with our Creamy Pumpkin and Goat Cheese Soup in the fall, or with a Basil Gazpacho in the summer.

Ingredients

  • makes 2 sandwiches
  • ¼ cup butter, room temperature
  • 1 tbsp Dijon mustard
  • 2 tsp minced fresh thyme
  • 2 tsp minced fresh parsley
  • salt and pepper
  • 8 slices country-style bread (about ½ inch thick)
  • ½ lb. Merry Goat Round, sliced thinly
  • ½ lb smoked ham, sliced thinly
  • ½ small red onion, sliced thinly
  • 1 large tomato, sliced thinly
  • Salt to taste

Instructions

Mix the first four ingredients in bowl. Season with salt and pepper. Arrange 4 bread slices on work surface. Divide half of the cheese equally among the bread slices. Top with the ham, then onion tomato, and remaining cheese. Top sandwiches with remaining bread. Spread herb butter on outside of sandwich tops and bottoms. Heat large non-stick skillet over medium heat. Add sandwiches and cook until bottoms are golden, about 3 minutes. Turn sandwiches over, cover skillet and cook until cheese melts and bread is golden, about 3 minutes. Serve sandwiches warm.
