The Fable

The spice and spirit of North Africa and the Middle East.

We wanted something spicy, but not too spicy. Something with a gentle heat. Something that would raise the eyebrows – in pleasant surprise. Was this possible? Experts told us yes – but we had to be willing to travel. It was an unforgettable journey. Have you ever tried to pile twenty-five goats into a make-believe charter plane? But as we walked out into the warm sun on the other side of the Atlantic, we knew right away we’d made it. It didn’t take us long, walking with goats in through the open air market, to find exactly the flavors we were looking for. And now you, too, can travel with us back to that special day – from your very own kitchen.

In the tradition of “Fromage de Chèvre,” pioneered by Laura Chenel who first made this delicious French fresh goat cheese in the 1970s, we are incredibly proud to champion our own fresh flavored goat cheeses (chèvre literally translates to “goat”).

Our farm-fresh goat milk is first pasteurized and cooled. We stir gently and then add cultures, which begin slowly consuming the milk sugars, creating lactic acid, which slowly drops the pH and coagulates the milk into curd over a longer period of time.

The following day, our makers scoop the curds into individual draining bags, which are hand worked and hung for 24 hours before being salted, spiced, and then packed.

This product contains milk, and FDA-designated “big-8” allergen. Note that in January 2023, the big-8 allergens become the big-9 with the addition of sesame.
