The Fable

Spread the Mediterranean love.

On an imaginary staff cruise we took one Appalachian winter morning through the Mediterranean, we found ourselves becalmed on the shores of one of the Greek islands for weeks. When supplies on board ran out, we ventured ashore, where we discovered, to our amazement, a herd of wild goats surviving on a pure diet of fresh figs and oranges. We knew their milk would taste special, but when we accidentally left it to sour overnight, in the morning the curds we strained out of the whey were something magical. We knew we couldn’t fully recreate it at home, but still we’ve tried ever since.

In the tradition of “Fromage de Chèvre,” pioneered by the late Laura Chenel who first made this delicious French fresh goat cheese in the 1970s, we are incredibly proud to champion our own fresh flavored goat cheeses (chèvre literally translates to “goat”).

Our farm-fresh goat milk is first pasteurized and cooled. We stir gently and then add cultures, which begin slowly consuming the milk sugars, creating lactic acid, which slowly drops the pH and coagulates the milk into curd over a longer period of time.

The following day, our makers scoop the curds into individual draining bags, which are hand worked and hung for 24 hours before being salted, fruited then packed.
