MountainTop is one of FireFly Farms' original aged cheeses, launched first in 2002. MountainTop takes its shape from pyramid-shaped Valancay molds. It is a surface-ripened cheese with blue and white molds. The blue mold gives the delicate piquancy of a young blue cheese, and the white mold imparts a silky creaminess. It is the most highly awarded cheese in our product line with nearly 30 individual national and international honors; including its selection by Saveur Magazine editors as one of their:
"50 favorite American cheeses."
MountainTop is a classic American original and the result of serendipity and innovation. It has been perfected through well-honed cheese making craft and attention to detail.
"A Very Happy Accident"
Check out the summer 2017 issue of Culture Magazine: The word on cheese. Very nice article about the hard-working cheesemakers at FireFly Farms and our own American original, MountainTop. MountainTop is the irresistible centerfold of this summer issue.

MountainTop Has been reformatted and repackaged in celebration of its 15th anniversary to meet the needs and expectations of a new generation of consumers: a smaller format for single serving
on-the-go lifestyles and transparent packaging allowing consumers to see the cheese and its state of ripeness. Happy birthday MountainTop!
The balance of the white and blue mold is what sets this cheese apart and makes it unique; achieving that balance is no easy task. The luscious texture of this cheese makes it an irresistible choice for any cheese lover; and often, those who have not enjoyed blue cheeses find MountainTop just the right "starter blue."
"MountainTop is our single most award winning cheese. There's nothing better than a fully ripe pyramid spread on crusty bread."
As with all of FireFly Farms' aged cheeses, we suggest opening MountainTop and bringing it to room temperature prior to consuming. Serve it as an appetizer or dessert on your cheese board with crackers, a baguette and add your favorite sweet or savory tapenade. A young MountainTop is perfect for cooking - as it will withstand the heat of melting. Enjoy it grilled in your favorite panini or melted over a hot vegetable side dish. MountainTop shines beautifully when melted over cooked bitter greens like broccoli rabe or asparagus. A more mature pyramid can stand alone next to a ripe pear, cured olives or seasoned pecans.
Our Creamery & Market customers often enjoy MountainTop paired with the following wines:
- Kung Fu Girl, Reisling, Washington State
- Fire Road, Sauvignon Blanc, New Zealand
- Yali, Sauvignon Blanc, Chile
- Mulderbosch, Cabernet Rose, South Africa
