MountainTop Bleu is one of FireFly Farms' original aged cheeses, first launched in 2002. MountainTop Bleu takes its shape from pyramid molds and is currently the most highly awarded cheese in our product line with nearly three dozen individual awards in national and international competitions. In 2005, MountainTop Bleu was selected by Saveur Magazine editors as one of their 50 favorite American cheeses. Originally intended as a blue mold cheese, MountainTop Bleu's close proximity to our bloomy white rind cheese, Merry Goat Round, created a wonderful accident -- a surface ripened blue and while mold cheese with a developing creaminess and blue piquancy as it ripens.

MountainTop Bleu is a surface-ripened blue and white mold pyramid. This cheese ages from its rind inward and grows progressively softer and creamier as it ripens. The balance of the white and blue mold is what sets this cheese apart and makes it unique; achieving that balance is no easy task. The luscious texture of this cheese makes it an irresistible choice for any cheese lover; and often, those who have not enjoyed blue cheeses find MountainTop Bleu just the right "starter blue."
As with all of FireFly Farms' aged cheeses, we suggest unwrapping MountianTop Bleu and bringing to room temperature prior to consuming. Serve as an appetizer or dessert on your cheese board with crackers, a baguette and add your favorite sweet or savory tapenade. A young MountainTop Bleu is perfect for cooking - as it will withstand the heat of melting. Enjoy it grilled in your favorite panini or melted over a hot vegetable side dish. MountainTop Blue shines beautifully when melted over cooked bitter greens like broccoli rabe or asparagus. A more pyramid round can stand alone next to a ripe pear, cured olives or seasoned pecans.
