Summer = simple.  Heat = lazy.  This beautiful Merry Goat Round appetizer fits the bill:  Easy, quick, delicious, and satisfying.
Truly easy:  Slice a baguette.  We used the wonderful Bonaparte baguettes available at FRESHFARM Markets Dupont; crackers would suffice.  Top with a tomato slice.  We used the heirlooms from Toigo Orchard.  Next, a slice of Merry Goat Round.  Next, a dollop of chimichurri (see below) and an oil-cured, pitted black olive.  Pop these bad boys under the heat for a few moments (or put them out on your own heat-wave changed patio).  The cheese will melt, the tomato will soften - ahhhhhh.

Chimichurri is an Argentine "asado" staple.  In our Argentine-influenced kitchen, it is present through spring and summer. Simply made:  Parsley, oregano, garlic, olive oil, sherry vinegar, lemon juice, salt, pepper, and red pepper flakes blended well in a food-processor.  The exact proportions are a matter of instinct and genetics.  Once made, Pablo leaves it on the counter and uses it virtually every meal.
